Apricot and Pear Conserve

1 C B&R Farms Dried Apricots, cut into thin slices
1 peeled lemon, thinly sliced and seeds removed (ends discarded)
1 C water
5 C rinsed, peeled, cored and chopped firm ripe Anjour or Bosc
pears (about 5 large)
4 C sugar

Place pears in a 5-quart pot; stir in sugar over medium heat, stirring occasionally. Continue cooking (boiling gently), uncovered and stirring occasionally for 25 minutes. Stir in cooked apricot mixture (including liquid) and boil, uncovered and stirring occasionally for 5 minutes longer or until reduced to about 5 cups.

Meanwhile, prepare 5 half-pint canning jars. Fill jars to within 1/8 inch of rim. Clean edges and seal with lids. 

Makes 5 half pints.
