Apricot Honey Cookie "Sandwiches"

Fun for the kids to make and eat! A good after school snack.

Apricot Honey Spread Cookie Sandwiches

Mini Vanilla Wafer Cookies

1 block cream cheese (low fat can be used)

1 jar B & R Farms Apricot Honey Spread (you may sub with B & R Farms No Sugar Added Dried Apricot Cinnamon Spread)

Spread bottom of one cookie with a small amount of cream cheese and apricot honey spread (or apricot cinnamon spread). Top with another cookie and set aside. Build as many cookies sandwiches as needed.

Note: Don’t make the cookie sandwiches too far in advance as the cookies loose their crunch.
