Apricot Pumpkin Cider Cake
For the Cake:
1 yellow cake mix
1 15 oz can of pumpkin puree
2/3 C B & R Farms Diced Dried Apricots*
1/2 C apple cider
For the Glaze:
1-1/2 C powdered sugar
3 T apple cider
3/4 t pumpkin pie spice
Optional: 1/2 C chopped walnuts
*Soak apricots in apple cider for 10 minutes, drain thoroughly. You can save drained cider to be used in cider glaze.
Combine cake mix & pumpkin in a large bowl. Beat until well incorporated. The batter will be very thick, but will come together nicely. Stir in drained apricots. Pour batter into a greased 7”x 11”x 2” pan. Follow baking instructions on box. When done, cool completely. While cake is cooling, mix sugar, cider and spice in small bowl until smooth. Pour over cake and sprinkle with optional walnuts.
