Apricot Quinoa Salad

quinoa-apricots-pecans-comp1.jpg   This high in protein and GLUTEN FREE salad is absolutely delicious by itself as a meal or along side a main course such as chicken or pork.

 

1 C quinoa

2 C water

1/2 C red wine & olive oil vinaigrette

1/3 C B & R Farms Diced Dried Apricots

1/4 C dried cranberries

1/3 C toasted walnuts or slivered almonds

3 green onions, sliced thinly

1 T lemon or orange zest

 Rinse quinoa until water runs clear. Drain well and put in a saucepan with the water, bringing to boil. Reduce heat, cover and simmer 10-15 minutes (until water absorbed). Cool and add remaining ingredients. Cover and refrigerate until cold.   Serves 6-8.
