Apricot Salsa

2 T lime juice Whisk together first 4 ingredients until blended; stir in apricots, onions, and bell peppers. Cover and chill. Serve with tortilla chips. Add additional lime juice if needed. Yield: about 4 cups. A great make-ahead for pot lucks and parties. Add jalapenos or serranos for a kick of heat!Amazing when paired with APRICOT MARGARITAS. |
