Apricot Sunrise Spread

1 lb creamed cottage cheese
1/3 C shredded coconut, toasted
1/4 C B&R Farms Dried Apricots, chopped

Stir together all ingredients until well mixed. Serve as a spread on whole wheat or raisin toast or mix into a fresh fruit salad.  Makes about 2 1/4 cups.
