Pat's Baked Apricot Apples
Perfect for fall when apples are at their peak!
4 medium Pippin or Granny Smith apples
5 t frozen apple juice concentrate
1/2 t cinnamon
1/8 t nutmeg
8 t raisins
1/2 C B & R Farms Diced Dried Blenheim Apricots*
1/2 C walnut pieces
Optional: 4 t dried cranberries
1/2 C vanilla yogurt or whipping cream
Preheat oven to 325F. Core the apples leaving the bottom intact (so filling doesn’t fall out) & place in baking dish. Mix frozen juice, cinnamon & nutmeg. Fill cavity of apple with 1-2 t dried fruit & nuts. Pour 1 t of juice/spice mixture over the fruit/nut mix. Pour 1/2” of water around apples & bake for about 20 min. until tender. Serve warm or cold, top with vanilla yogurt or whipping cream, if desired. *Soak apricots in warm water for 10 minutes, draining before adding to recipe.
