Harvest Pie
3 C B & R Farms Dried Apricots, chopped
6 oz dried cranberries
1/2 C golden raisins
1 egg, +1 egg yolk, beaten
1 C dark brown sugar, packed
1/2 C each: walnuts pieces & unsalted butter, melted
2 t pure vanilla
1/2 t cinnamon
1/4 t salt
2 pie crusts
1 egg white, stirred
1/2 t sugar
Preheat oven to 350F. Line a pie pan with 1 crust.
In a large saucepan, put apricots, cranberries & raisins, covering with water by 2”. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat & simmer 5 min. Drain and cool 15 min. Combine rest of ingredients and stir into fruit. Pour filling into pie shell. Cut second crust into strips and complete a lattice pattern over pie. Brush with egg white and sprinkle with sugar. Bake 1 hour or until golden.
