Lynn's Dried Apricot Chili Chicken Appetizers

4 boneless chicken breast (skinless)
4 cloves minced garlic
2 T extra virgin olive oil
2 T light soy sauce or to taste
2/3 C B & R Farms Dried Apricot Red Pepper Topping

Cut chicken into 1" cubes, sauté in olive oil and garlic about 10 minutes, stirring frequently. Stir in soy sauce and red pepper topping, mixing well to coat.

Simmer until chicken is coated with sauce. Serve with toothpicks and a side bowl of sauce for dipping or add steamed vegetables of your choice the last 5 minutes of cooking and serve over bed of steamed rice.

Don’t order in Chinese food. Make your own with a twist! This recipe is awesome as either appetizer or entrée. Who knew California dried apricots could create such a bold, exotic flavor!  Serve with APRICOT SNAP PEAS STIR-FRY.
