Quinoa with dried apricots-pecans

Quinoa sets the stage for healthy ingredients to mingle perfectly in a delicious side dish.

3 T chopped pecans

2/3 C quinoa

2/3 C orange juice

2/3 C water

1/2 C B & R Farms Dried Blenheim Apricots- diced

1/4 C golden raisins

2    green onions, finely chopped

1 T chopped fresh cilantro

1 T lemon juice

1 t olive oil

1/2 t salt

In small nonstick skillet, toast pecans over medium heat, stirring often until lightly toasted. Take off heat & let cool.

Place quinoa in a fine-mesh strainer; rinse under cold running water 2 minutes. In medium saucepan, stir together quinoa, orange juice & water and eat to boiling. Reduce heat; cover & simmer 12-15 minutes or until liquid is absorbed. Transfer to a large bowl. Add apricots, raisins, green onions, cilantro and toasted pecans. Stir in lemon juice, oil and salt. Serve room temperature or cold.  Serves 4.
