1 cup B & R Farms
California Dried Apricots Prepare Crust: Mix
1/3 cup B&R Farms dried apricots, (reserve remainder for glaze) combine
apricots with water in pan - simmer till soft - beat until smooth. Stir
in 1/3 cup of the sugar and cool. Beat egg whites to fluffy and add a
½ cup of sugar and set aside. Beat cream cheese remaining ½
cup sugar, egg yolks, lemon rind, lemon juice and vanilla. Stir in apricots
and fold in egg whites. Apricot Glaze : Combine the remaining dried apricots with 3/4 cup of water in a pan. Bring to a boil, lower heat and cover. Simmer until apricots are soft. Beat until smooth, return to pan, stir in 1/3 cup sugar and 3/4 cup of light corn syrup. Heat, stirring constantly until sugar is dissolved. Let cool.
