APRICOT DREAM BARS

2/3 cup B&R Farms Dried Apricots
½ cup butter or margarine
¼ cup granulated sugar
1 1/3 cups sifted all-purpose flour
2 eggs
1 cup brown sugar (packed)
½ tsp baking powder
¼ tsp salt
½ tsp vanilla extract
½ cup chopped nuts
Confectioners sugar
Rinse apricots, cover with water and boil 10 minutes. Drain, cool and chop.

Combine butter, granulated sugar and 1 cup flour, and blend together until crumbly. Pack into bottom of greased 8-inch square pan. Bake in moderate oven (350F) about 15 minutes, until lightly browned. Beat eggs and gradually beat in brown sugar. Sift remaining 1/3 cup flour with baking powder and salt. Stir into egg and sugar mixture. Blend in vanilla, nuts and apricots. Spread over baked layer. Bake at 350F about 30 minutes longer. Cool. Cut into bars and roll in confectioners" sugar. This recipe makes 32 bars, 1x2 inches in size.
