Filling:1-1/2 cups B&R Farms Dried Apricots

1-1/2 cups water
1/4 cups honey

Base:1-1/3 cups firmly packed brown sugar
1 cup butter, softened
1-1/2 cups quick-cooking or old-fashioned rolled oats, uncooked
1-1/2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ cup chopped pecans
Confectioners' sugar (optional)

Combine apricots and water in a medium saucepan. Simmer, uncovered over medium heat for 15 minutes. Drain; let cool, then chop. Stir honey into chopped apricots.

In large bowl, beat brown sugar and butter until fluffy (by hand or with a hand-held mixer). Add oats, flour, baking soda and salt; beat until well mixed. Stir in pecans.

Measure 2 cups oats mixture and reserve for topping. Press remaining oats mixture in bottom of ungreased 13x9x2-inch baking pan. Bake in preheated 375-degree oven 10 minutes, or until crust is light brown.

Spread apricot filling evenly over crust to within ½-inch of sides of pan. Sprinkle reserved 2 cups oats mixture over apricot filling. Return to 375-degree oven and bake 25 minutes, or until golden. Let cool in pan. Cut into squares. Dust with confectioners' sugar, if desired.
