APRICOT LOAF

1/2 cup (1 stick) butter
1/2 cup sugar
3 eggs
1/2 cup fresh orange juice concentrate
Grated rind of 1 fresh orange
1 cup chopped B&R Farms dried apricots
2 3/4 cups crushed graham crackers
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup chopped walnuts

Melt butter in a large saucepan. Stir in sugar. Add eggs one at a time, and stir until mixture is smooth. Stir in remaining ingredients in the order listed. Mix thoroughly.

Turn into a greased loaf pan (8 1/2x4 1/2 inches). Bake in a moderate oven (325 degrees) for 55 minutes or until toothpick inserted in center comes out clean.

Allow to cool in pan for 5 mins. Then turn out on rack to cool thoroughly before slicing. Makes 1 loaf.
