APRICOT NUT BREAD

1 cup diced B&R Farms Dried Apricots
1 cup water
2 large eggs
3/4 cup sugar
½ tsp almond extract
4 tblsp canola oil
2 cup flour, dash of salt
1 ½ tsp baking powder
½ tsp baking soda
3 tblsp milk
1 tblsp lemon juice
grated lemon rind of 1 lemon
½ cup chopped walnuts

  1. Cut B&R Farms dried apricots into small pieces. Pour water over dried apricots in a saucepan. Cook on medium heat for 5 minutes. Cool.
  2. In a large mixing bowl beat eggs with sugar until light. Add oil 1 tblsp at a time and beat until well blended.
  3. Mix flour, salt, baking powder and baking soda.
  4. Add 2/3 of flour mixture and milk to the egg mixture, beat until blended.
  5. With a spoon mix in the dried apricots with its liquid. Blend in the remaining flour lemon rind and chopped walnuts.
  6. Pour into well greased and floured pan.
  7. Bake at 350F for one hour. Cool in pan.
