APRICOT ORANGE QUICK BREAD

3 cups flour
1 1/4 cup sugar
1 cup (diced) B&R Farms Dried Apricots
1 tbsp grated orange peel
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 1/2 sticks unsalted butter (melted and cooled)
1 container (8oz) plain low fat yogurt
1/2 cup fresh orange juice
3 eggs

Glaze and decorations:
1 cup powder sugar
4 to 4 1/2 tbsp fresh orange juice
B&R Farms Dried Apricots

  1. For bread: Preheat oven to 375F.
    Grease 10 inch Bundt pan. In large bowl, mix first 7 ingredients.
    To cooling butter, whisk in yogurt, orange juice, and eggs. Add to flour mixture and stir just until moistened. Spoon into prepared pan.
  2. Bake 35 mins., cool.
  3. For glaze: In small bowl use just enough orange juice mixed with powdered sugar to make thick glaze and drizzle over cooled cake. Decorate with B&R Farms dried apricots.
