SPICY APRICOT MUFFINS

3/4 cup B&R Farms dried apricots (soaked in water until doubled in size, reserve water)
1/4 cup shortening
1/2 cup brown sugar (packed)
1 egg
2 cups sifted all-purpose flour
4 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup liquid from apricots
1/2 cup milk

Chop B&R Farms dried apricots. Cream shortening and sugar together. Blend in egg. Sift together flour, baking powder, salt and spice. Add to creamed mixture alternately with cooking liquid and milk. Blend in apricots. Fill greased muffin pans about 2/3 full. Bake in hot oven 400F, 20 to 25 mins. Makes about 15 medium-sized muffins.
