Apricot Dessert Rolls
1 cup B&R Farms
Dried Apricots
2 1/2 cups water
1 1/2 cups sifted all purpose flour
1 3/4 cups granulated sugar
3 tsp baking powder
3/4 tsp salt
1/4 cup shortening
1/2 cup milk
1 tbsp melted butter or margarine
Rinse B&R Farms
dried apricots, add water and boil slowly 25min, or until fruit is tender.
Drain, reserving liquid.
Sift together flour, 2 tbsp sugar, baking powder and salt. Cut in shortening.
Add milk and mix thoroughly. Roll out into rectangle about 6x9 in. Spread
with butter. Then arrange apricots over dough. Sprinkle with 1/2 cup sugar.
Roll as for jelly roll, from short side to make 9in roll. Combine cooking
liquid and water to make remaining sugar and heat to boiling. Pour into
8in square baking dish. Cut roll into 9 slices and place quickly in hot
syrup, cut side down.
Bake in hot over 425F about 25min. Serve warm with sauce from bottom of
pan.
