DRIED APRICOT GINGER DRESSING

½ cup B&R Farms Dried Apricots
3 tbsps water
1 tbsp vegetable oil
1-2 tsps fresh lemon juice
3/4 tsp minced, peeled, fresh ginger root
½ tsp sugar
1/4 tsp freshly ground black pepper
1/8 tsp salt

In a blender purée ingredients until smooth. Serve dressing immediately. (Dressing will separate if made ahead.) Makes about 2/3 cup.
