Apricot Cranberry Oatmeal Cookies

Short on time?  Try this super simple recipe using B & R Farms' Diced Apricots.  It will add a little WOW factor to a brunch, the end of a great meal or a special treat for family and friends.

 

½ C unsalted butter or margarine, softened

1/3 C light brown sugar, packed

1/3 C granulated sugar

1 lg egg

2 t vanilla

2/3 C flour

½ t baking soda

1/4 t salt

1 C rolled oats

3/4 C dried cranberries

3/4 C B&R Farms Diced Dried Apricots

 

Cream butter and sugars with mixer.  Add egg and vanilla.  Mix until smooth.  Add flour, baking soda, salt and oats.  Mix together.  Use wooden spoon to stir in cranberries and apricots.  Drop batter by tablespoon onto lightly greased baking sheets, 2 ½ inches apart.  Bake at 450F until medium brown, about 11 minutes.  Store in airtight container or resealable bag.  Cookies may be frozen for up to three months.  Makes approximately 2 dozen.
