Pork Chops in Apricot Sauce


4 pork chops

15 oz . B & R Farms Fresh Apricot

1 freshly chopped onion

2 tbsp. Tomato puree

Grated rind & juice of 1 orange

1 oz. butter



Brown chops in melted butter and put in casserole dish. In       same pan brown onions and add puree apricots and juice, tomato puree, orange rind and juice. Season and simmer gently for 10 minutes, then pour over chops. Cover casserole dish and cook in moderate oven for 1 1/4 hour. Serve with rice, peas and sweet corn.
