INGREDIENTS
1 cup rolled oats
2 cups milk or water
1 medium apple, peeled and chopped
1 medium carrot, peeled and grated
½ cup diced apricots
½ tsp ground cinnamon
1 tsp vanilla extract
1/8 tsp salt
2 tbs chopped nuts or seeds (almonds, walnuts, etc.)
DIRECTIONS
- In a medium saucepan, bring water or milk to a boil then add the rolled oats and salt. Reduce heat to simmer and cook for 5-7 minutes, stirring occasionally until the oats are soft and creamy.
- Once cooked, add In the apricots, apple, carrots, cinnamon, and vanilla. Let it continue to cook for an additional 2-3 minutes until the apples are softer and the carrots are tender.
- Once ready to serve, top with the chopped nuts.
