Apricot-Lime Chicken

Fresh summer fruit makes this a extra delicious and healthy!

INGREDIENTS

1 C B & R Farms Dreid Apricot Preserves
3 garlic cloves, chopped
1/3 C fresh lime juice
4 t low sodium soy sauce
4 skinless/boneless chicken breasts (approx. 1.5 lbs)
2 T light brown sugar
3 T pineapple juice
1 t apple cider vinegar
1/4 t allspice
1 each: nectarines & plums*, chopped
1/2 C pitted cherries, chopped
Fresh cilantro

 *It's easy to subsitute with other summer stone fruit such as apricots or peaches.

DIRECTIONS

Blend preserves, garlic, lime juice & soy sauce in small bowl & set aside 1/2 C for later use. Pour remaining marinade in large resealable bag and add chicken, tossing to coat. Seal and refrigerate at least 2 hours or overnight.

Mix sugar, pineapple juice, vinegar & allspice in a medium bowl. Add fruit, toss to coat, cover and refrigerate until ready to serve.

Place chicken on grill (direct, medium heat), discarding marinade in bag. Cook chicken 18-20 minutes (turning halfway through cooking), occasionally brushing with reserved marinade. Continue grilling until internal temperature reaches 165F. Place chicken on platter and top with prepared fruit mixture & cilantro leaves. Serves 4.
