Apricot Walnut Spinach Salad

INGREDIENTS FOR DRESSING

½ C balsamic vinegar
1/4 C B & R Farms Dried Apricot Preserves
2 T extra virgin olive oil
2 T water
2 t Dijon mustard
1 clove garlic, minced
1/8 t salt
Fresh ground black pepper

DIRECTIONS FOR DRESSING

Whisk all ingredients together in a small bowl except salt and pepper; season to taste.

INGREDIENTS FOR SALAD

1 bag fresh spinach

½ C candied walnuts

½ C B & R Farms Diced Dried Blenheim Apricots

DIRECTIONS FOR SALAD

Toss dressing with fresh spinach, candied walnuts and diced apricots. Serve immediately with crusty French bread.

Option: Add diced cooked chicken for a complete meal.
