Beautiful to look at and a delicious blend of spicy ginger, sweet and tart apricot preserves and creamy yogurt and goat cheese.
4 oz goat cheese
1 C plain low fat yogurt
2 T sugar
1/3 C heavy whipping cream
8 T B & R Farms Dried Apricot Preserves or Topping
12 gingersnap cookies, lightly crushed
4 B & R Farms Dried Apricots
In food processor with blade, process cheese, yogurt & sugar until smooth.
In separate bowl, whisk cream until soft peaks form.
Gently fold cream into yogurt mixture until combined.
Spoon 1 T preserves or topping into bottom of each glass.
Layer with 1/3 C cheese mixture.
Top with 1/8 C gingersnaps.
Repeat layering, ending with gingersnaps.
Finish with dried apricot garnishes.
Makes 3-4 servings depending on glass.
