APRICOT BREAKFAST BARS
Delicious and healthy "breakfast on the GO!" Serve with fresh fruit & a glass of your favorite juice completes the most important meal of the day.
3/4 C local honey
1/2 C almond butter
1/2 t cinnamon
3 C honey graham cereal
1 C crispy rice cereal
1/2 C slivered almonds, toasted
1/2 C B & R Farms Diced Dried Apricots
2 t pure vanilla extract
Heat honey until boiling in large pan. Reduce heat, continue cooking for 5 minutes. Stir in butter, cinnamon, cereal & almonds. Add apricots and vanilla. Spread onto a prepared baking sheet.
Cool 10 minutes, then press down firmly on mixture with a wide spatula. Cool completely, then cut into bars, individually wrap for ‘take & go” breakfast.
