Apricot Chutney Chicken Salad


3 C rotisserie chicken meat, chopped & chilled
½ C light mayonnaise
3 T B&R Farms Dried Apricot Chutney
3 T minced red onion
2 ribs celery, chopped
1 ¼ t curry powder


Stir together all ingredients in a medium bowl and chill. Serve over a bed of fresh mixed greens or in a pita pocket lined with lettuce. Serves 6.

Another idea: Spoon Chutney over cream cheese and serve with crackers for a fast appetizer! Top with trail mix that includes dried cranberries.
