2/3 C B&R Farms Dried Apricots
½ C butter or margarine
¼ C granulated sugar
1 1/3 C sifted all-purpose flour
1 C brown sugar (packed)
½ t baking powder
¼ t salt
½ t vanilla extract
½ C chopped nuts
Rinse apricots, cover with water and boil 10 minutes. Drain, cool and chop.
Combine butter, granulated sugar and 1 cup flour, and blend together until crumbly. Pack into bottom of greased 8" square pan.
Bake at 350F about 15 minutes, until lightly browned.
Beat eggs and gradually beat in brown sugar.
Sift remaining 1/3 cup flour with baking powder and salt. Stir into egg and sugar mixture.
Blend in vanilla, nuts and apricots. Spread over baked layer.
Bake at 350F about 30 minutes longer. Cool. Cut into bars and roll in confectioner’s sugar. Makes 32 1” x 2” bars.
