Apricot Jello


1 lb. B & R Farms Diced Apricots
1 1/2 cups water
1/2 cup sugar
3 (3 oz) packages of orange jello
5 cups water
1/2 cup crushed pineapple, small can
1 cup shredded almonds (optional)


Simmer apricots in 1 1/2 cups water until tender. If apricots are very dry add more water. Remove from heat, add sugar. Whip fruit, with an electric beater until pulpy, reserving 1/2 cup for sauce. Prepare jello with 5 cups hot water. Combine apricots, pineapple, almonds with jello. Pour into ring mold or 9”x13” pan.


1/2 (3 oz) package cream cheese
1/2 apricot pulp
1/2 pint whipped cream
1/4 cup powdered sugar
1/4 teaspoon almond extract
1/2 teaspoon vanilla

Beat cream cheese with apricot pulp and 4 tablespoons cream, using mixer until fluffy. Add remaining cream and sugar, whip. Add flavorings. Pour on top of jello mixture. Refrigerate until set.
