3 C flour
1 1/4 C sugar
1 C B&R Farms Diced Dried Apricots
1 T grated orange peel
2 t baking powder
1 t baking soda
1/4 t salt
1 1/2 sticks unsalted butter (melted and cooled)
8 oz plain low fat yogurt, plain
1/2 C fresh orange juice
INGREDIENTS FOR GLAZE AND DECORATIONS
1 C powdered sugar
4-4 1/2 T fresh orange juice
10 B & R Farms Dried Apricots
DIRECTIONS FOR BREAD
Preheat oven to 375F.
Grease 10” Bundt pan. In large bowl, mix first 7 ingredients.
To cooled butter, whisk in yogurt, orange juice and eggs. Add to flour mixture and stir just until moistened. Spoon into a prepared pan and bake 35 minutes, cool and turn out onto serving plate.
DIRECTIONS FOR GLAZE
In small bowl use just enough orange juice mixed with powdered sugar to make thick glaze and drizzle over cooled cake. Decorate with dried apricots.
