Apricot Salsa

 

 

 


2 T lime juice
2 T olive oil
1/4 t salt
1/8 t coarsely ground pepper
1/4 C B&R Farms Diced Dried Apricots  (soak in water till doubled in size)
1/2 C diced purple onion
1/3 C diced red bell pepper

Whisk together first 4 ingredients until blended; stir in apricots, onions, and bell peppers. Cover and chill.  Serve with tortilla chips.  Add additional lime juice if needed.  Yield: about 4 cups.

A great make-ahead for pot lucks and parties.  Add jalapenos or serranos for a kick of heat!Amazing when paired with APRICOT MARGARITAS.
