Apricot Spinach Bacon Salad

Perfect for hot summer evenings- refreshing, nurishing and QUICK!


1- 10 oz bag fresh pre-washed spinach
½ C red bell pepper, diced
1/3 C red onion, very thinly sliced and quartered
3 strips turkey bacon, cooked and crumbled
1/2 C B & R Farms Diced Dried Apricots
1/2 dried cranberries


½ C light or regular balsamic vinaigrette
2 T B & R Farms Dried Apricot Preserves
1 T lemon juice
Options: Add 1 C cubed cooked chicken. Add 1/2 C croutons of your choice.


Place spinach, bell peppers, onion, bacon and dried cranberries in a large salad bowl. Add optional chicken. Whisk together vinaigrette, preserves and lemon juice; pour over salad and toss well to coat. Top with optional croutons. Serve immediately. Makes 4-6 servings.
