Apricot Walnut Loaf


1 C B&R Farms Dried Apricots (soaked in water until doubled in size)
3 C sifted all-purpose flour
3/4 C granulated sugar
4 t baking powder
1 1/2 t salt
1 C chopped walnuts
1 egg
1 1/2 C milk
1/4 C melted shortening
1 T grated orange rind
1/8 C B & R Farms Dried Apricot Preserves


Drain and chop apricots.

Sift together flour, sugar, baking powder and salt. Stir in walnuts.

Beat egg lightly and add milk, shortening and rind.

Stir liquid mixture and apricot into dry mixture.

Turn into greased loaf pan and allow to stand for 15 mins.

Bake at 350 F 1-1 1/4 hours. Cool 15 mins. And remove from pan and cool completely on wire rack.

Glaze top of loaf with Preserves.

Makes 1 loaf.
