1/3 C whole bran cereal (not bran flakes)
1/4 C water
3/4 C butter or margarine, softened
1/2 C firmly packed brown sugar
1/4 C local honey
1 t vanilla
1 C all-purpose flour
1 t each baking soda and salt
1/4 C dry milk
1 C regular rolled oats
1 C B & R Farms Dried Apricots, finely chopped
3/4 C walnuts, chopped
Combine bran and water in a small bowl; set aside.
In a large bowl, beat together butter and brown sugar until creamy. Add egg and beat until fluffy. Mix in honey, vanilla and bran. Combine the flour, soda, salt, dry milk, oats, apricots and walnuts. Stir into cream mixture. Drop by level spoonfuls onto greased cookie sheets, placing dough about 2” apart.
Bake at 375F for 10 minutes or until golden brown and firm when lightly touched. Makes about 3 dozen cookies.
