Dried Apricot Glazed Corned Beef

Two 1 1/4 lb corned beef, rinsed

1/2 C water

1/2 C B & R Farms Dried Apricot Preserves

2 T brown sugar

1 T low sodium soy sauce

Preheat oven 350F. Coat roasting pan with non-stick cooking spray. Place the beef in pan and add water. Cover tightly with foil and bake 2 hours. Drain liquid from pan.

In a small bowl, combine the remaining ingredients. Spread evenly over beef. Bake uncovered 25-30 minutes or until beef fork-tender, basting occasionally with the pan drippings. Slice the beef against the grain and serve immediately with roasted potatoes, onions and carrots.
