INGREDIENTS
1 C sesame seeds
1/2 C each: chopped nuts (unsalted peanuts, cashews, and/or almonds) and sunflower seeds or pumpkin seeds
1/2 C each firmly packed brown sugar and honey
1/4 t salt
½ C B&R Farms Dried Apricots
½ C each: other dried fruits such as dates, raisins, cherries and/ or apples
Flaked coconut
butter
DIRECTIONS
Combine sesame seeds, nuts, and other seeds. Spread in a thin layer on a rimmed baking sheet. Roast in a 350F oven for about 15 minutes or until light golden, shaking pan occasionally; set aside.
In a wide frying pan over medium heat, combine brown sugar, honey, salt and dried fruit. Bring mixture to a boil, stirring constantly and cook for 2 minutes. Remove pan from heat and immediately stir in seeds, nuts, and coconut, mixing thoroughly. Turn into a well-buttered, shallow 9” x 13” baking dish. With a large, buttered spoon, press mixture firmly and evenly over bottom.
Let cool at room temperature for 30 minutes. Lift out with a wide spatula onto cutting board. Use a large knife to cut into 11/2” by 3” rectangles. When no longer sticky (after about 3 hours), wrap individual pieces or several pieces together in plastic wrap and store at room temperature. Makes approximately 22 bars.
