Fruited Cheddar Ball


3/4 cup B & R Farms Diced Apricots
1/3 cup whole pitted dates
1/3 cup golden raisins
1/4 cup cognac or brandy
1 1/2 cup mild cheddar cheese, cut into 3/4” cubes
12 ounces cream cheese
3/4 cup slivered almonds


Process apricots and dates in a food processor until chopped. Combine chopped fruit, raisins and cognac in a small bowl; cover and let stand 1 hour or until liquid is absorbed. 

Process cheddar cheese cubes until finely chopped. Add cream cheese, a third at a time; process until blended, stopping as needed to scrape down sides. Add fruit mixture and almonds, pulse several times or until fruit and almonds are finely chopped and mixture is combined.

Shape cheese mixture into a 6” ball. Wrap tightly with plastic wrap; chill until firm. Let come to room temperature before serving. Serve with assorted crackers and fresh apple slices.
