Halibut with Apricot Red Pepper Topping


4 6 oz halibut fillets or steaks
2 T butter
1/3 C dry white wine
1 t minced parsley
4 T Dried Apricot Red Pepper Topping


Preheat oven to 375F. In a shallow baking dish, place the halibut, skin side down. Place ½ T butter on each fillet; drizzle with the white wine and sprinkle with parsley. Bake uncovered just until partially done, approximately 5-7 minutes. Remove halibut from oven and spoon 1Tbsp of topping over each fillet. Return halibut to oven and continue to bake an additional 5-7 minutes, depending on the thickness of the fish, until done.
