Marshmallow Apricot Yams

INGREDIENTS

3 yams
4 T butter
1/4 C orange juice
2/3 C B&R Farms Dried Apricot Preserves
½ C marshmallows
1/4 t cinnamon

DIRECTIONS

Cut peeled yams in large pieces and place in a baking pan. Dot with butter, add oj and bake for 20 min. at 375F. Top with preserves and bake for another 20 min. Sprinkle with cinnamon and marshmellows. Cover and let sit until marshmellows melted. Broil for a few minutes to brown topping.
