Recipe: Apricot and Apple Roses

INGREDIENTS

2-3 large apples of your choice
Half a lemon
2 sheets of puff pastry
Apricot Spread
Cinnamon

Optional Toppings: honey, powdered sugar

DIRECTIONS

  1. Preheat your oven to 350°F (175°C).
  2. Fill a large bowl with cold water and lemon juice.
  3. Wash and halve the apples, removing the cores. Thinly slice each half and place the slices into the lemon water to prevent browning.
  4. Microwave the apple slices for about 45 seconds, or until they become flexible enough to roll.
  5. Roll out the puff pastry and cut it into 6 even strips, about 2 inches wide.
  6. Spread apricot spread evenly over each strip of puff pastry.
  7. Sprinkle with cinnamon to taste.
  8. Arrange the apple slices along the top half of each strip, slightly overlapping them and letting the rounded edges hang a bit over the top. Fold the bottom half of the pastry up to cover the bottom of the apple slices.
  9. Gently roll each strip from one end to the other to form a rose shape, keeping the apple edges visible.
  10. Place each apple rose into a muffin tin to help maintain its shape. Bake for 35–40 minutes, or until the puff pastry is golden brown. (If the apples begin to brown too quickly, cover loosely with foil.)
  11. Remove from the oven and allow the apple roses to cool slightly.
  12. Finish with a dusting of powdered sugar, cinnamon, or a drizzle of honey before serving. Enjoy!
