Recipe: Chocolate Apricot Truffles

Truffles
1 cup dark chocolate chips
½ cup B&R Farms Apricot Puree
¼ cup coconut milk
3 tbs coconut flour
1 tsp vanilla extract
¼ tsp salt
Orange zest from 1 orange
Outside Coating
½ cup dark chocolate chips
1 tbs coconut oil
B&R Farms Diced Apricots for topping
DIRECTIONS
- Add the dark chocolate chips, apricot puree, orange zest, coconut milk, vanilla extract, and salt into a small saucepan. Stir on low until smooth and creamy.
- Transfer the chocolate mixture into a large bowl. Add in the coconut flour and fold together with a spatula until the flour has been absorbed. Cover the bowl with plastic wrap and chill in the refrigerator for at least 1 hour.
- Once cool, roll into about 14 small balls, place on a plate or baking sheet and return to the refrigerator whole making the coating.
- Melt the chocolate chips and coconut oil in a small bowl in the microwave for 20 second intervals until smooth.
- Dip each ball into the chocolate and allow excess coating to drip off before placing on parchment paper
- Repeat until everything is evenly coated then top all of them with a drizzle of the remaining chocolate and diced apricots.
- Refrigerate for at least 15 minutes before serving
