Recipe: Chocolate Apricot Truffles

INGREDIENTS

Truffles

1 cup dark chocolate chips

½ cup B&R Farms Apricot Puree

¼ cup coconut milk

3 tbs coconut flour

1 tsp vanilla extract

¼ tsp salt

Orange zest from 1 orange

Outside Coating

½ cup dark chocolate chips

1 tbs coconut oil

B&R Farms Diced Apricots for topping

 

DIRECTIONS

  1. Add the dark chocolate chips, apricot puree, orange zest, coconut milk, vanilla extract, and salt into a small saucepan. Stir on low until smooth and creamy.
  2. Transfer the chocolate mixture into a large bowl. Add in the coconut flour and fold together with a spatula until the flour has been absorbed. Cover the bowl with plastic wrap and chill in the refrigerator for at least 1 hour.
  3. Once cool, roll into about 14 small balls, place on a plate or baking sheet and return to the refrigerator whole making the coating.
  4. Melt the chocolate chips and coconut oil in a small bowl in the microwave for 20 second intervals until smooth.
  5. Dip each ball into the chocolate and allow excess coating to drip off before placing on parchment paper
  6. Repeat until everything is evenly coated then top all of them with a drizzle of the remaining chocolate and diced apricots.
  7. Refrigerate for at least 15 minutes before serving
