Spicy Apricot Lemongrass Shrimp

INGREDIENTS

3 tbsp. B & R Farms Red Pepper Topping
2 tbsp. soy sauce
2 tbsp. honey
2 tbsp. Gourmet Garden Lemongrass Paste
2 cloves garlic, minced
1 lb. large shrimp, peeled and deveined
1/4 cup snipped fresh chives
Short bamboo skewers, soaked in water to avoid burning

DIRECTIONS

Stir together all ingredients except shrimp, chives and skewers in a small bowl. Divide mixture into 2 bowls.

Thread 2 shrimp onto each skewer and place on a baking sheet. Grill or broil over medium heat for a few minutes on each side or until fully pink, basting with half of the sauce liberally several times during cooking.

Place on a platter and brush with remaining sauce; sprinkle with chives.
