Whole Wheat Couscous with Dried Fruit

INGREDIENTS

2 cans (14 ½ oz. each) fat-free chicken or vegetable broth
19 oz chickpeas, rinsed
2 T minced garlic
3/4 t ground cinnamon
1 box whole-wheat couscous
3/4 C B&R Farms Dried Apricots, chopped
½ C each golden raisins and sweetened dried cranberries
Garnish: chopped parsley

DIRECTIONS

Mix broth, chickpeas, garlic and cinnamon in a 3-4 quart saucepan. Bring to a boil; stir in couscous. Return to a boil, reduce heat, cover and simmer 2 minutes or until all broth is absorbed. Stir in fruit, remove from heat, cover and let stand 5 minutes. Stir to fluff, spoon into serving dish and sprinkle with parsley.
