1 medium yellow onion, diced
4 cloves garlic, minced
Small piece of fresh ginger, minced
1-2 Serrano seeded peppers, minced
2-3 C B & R Farms Dried Blenheim Apricots*
1/3 C honey
1/4 C each ketchup & tomato paste
2 T white wine vinegar
2 T good quality olive oil
2 C water
Optional: 1/2-1 t cayenne pepper
Salt and pepper
*In small bowl, cover apricots with water, soak 15 minutes and drain.
Sauté onions, garlic, ginger & peppers in olive oil a large pot over medium heat until the onions start to soften. Add drained apricots. Cook another few minutes and then add the liquids and bring the mixture to a slow simmer. Continue simmering for 10 minutes, uncovered. Remove from heat, cool and then blend until desired texture is reached (smooth or a bit chunky). Return to heat and simmer for 45 minutes or until sauce thickens, stirring occasionally. Add salt and pepper to taste.
