Sounds unusual but is so good...and QUICK! Perfect for busy mornings!
1 strip bacon or 1 link sausage
1 egg, beaten
Salt and pepper to taste
1 (8”) flour tortilla
3 T shredded cheddar cheese
2 T B & R Farms Dried Apricot Chili Preserves or B & R Farms Apricot Red Pepper Topping
Tear bacon into bite size pieces (or chop sausage); cook in a small nonstick skillet 1-2 minutes or until sizzling.
Add egg; cook and stir for about 2 minutes more (until done), adding salt & pepper to taste.
While egg is cooking, warm tortilla, spread with chili preserves & sprinkle on the cheese.
Slide the cooked eggs & breakfast meat onto the tortilla.
Microwave for 15-30 seconds, roll up, wrap in a napkin and go!
