Apricot Orange Quick Bread

3 C flour
1 1/4 C sugar
1 C B&R Farms Diced Dried Apricots

1 T grated orange peel
2 t baking powder
1 t baking soda
1/4 t salt
1 1/2 sticks unsalted butter (melted and cooled)
8 oz plain low fat yogurt, plain
1/2 C fresh orange juice
3 eggs

Glaze and decorations:
1 C powdered sugar
4-4 1/2 T fresh orange juice
10 B & R Farms Dried Apricots

For bread: Preheat oven to 375F.
Grease 10” Bundt pan. In large bowl, mix first 7 ingredients.
To cooled butter, whisk in yogurt, orange juice and eggs. Add to flour mixture and stir just until moistened. Spoon into a prepared pan and bake 35 minutes, cool and turn out onto serving plate.

For glaze: In small bowl use just enough orange juice mixed with powdered sugar to make thick glaze and drizzle over cooled cake. Decorate with dried apricots.
