Ursula’s Waldorf Chicken Salad

1/4 C local honey

2 T Dijon mustard

1 T poppy seeds

1/3 C fresh lemon juice

Zest from 1 lemon

1/4 C vegetable oil

12 B & R Farms Dried Apricots, cut in halves

2 C cooked chicken meat, diced

2 medium local apples, cored & diced

1 C celery, diced

1/3 C nuts (walnuts, pecans or almonds), toasted

1/4 C sliced green onions

 

Place first 6 ingredients in a bowl & mix well. Stir in apricots and let stand 30 minutes.

 

After 30 minutes, add chicken & toss. Chill until ready to serve. When ready to serve, add remaining ingredients & toss well. Four servings.
