Preheat oven 350F and coat 9” square baking dish with cooking spray. In a small bowl, combine cocoa, flour, baking powder and salt. In a large bowl, beat the eggs and grad. sugar until light & fluffy. Add brown sugar, coffee granules and vanilla; beat additional 2 minutes. Add oil in slow stream, beating 2 minutes more. Stir in dry ingredients. Mix in apricots & 1/4 cup chocolate chips. Spread into pan, sprinkle with mini chips. Bake 20-24 min. or until the center is slightly firm. Be careful not to over bake. Cool on wire rack, cut and serve. Makes 16 brownies.
